5th Day After

• Breakfast: Orange & grapefruit juice (300 ml), and quite a bowl of watermelon quite some time later... ;-)
• Snack: Two cereal bread slices with humus, zahtar & garlic sprouts
• Lunch: Bowl of raw zucchini/courgette spaghetti with home made tzaziki and chopped tomatoes
• Dinner: Walnut stuffed peppers - unbelievably tasty! Berry got two, I ate one, and there's a lunch box with three in our fridge
• Snack: Popcorn • Dessert after this dramatic foot match: Crème brûlée that I made on 10th June (finally, although I shouldn't)
• Special treat: Sunbathing in the morning
• Max. daytime temperature: 22° C • Weather: Cloudy, sunny, fair, cloudy, fair... Brussels!

Walnut Stuffed Peppers
6 small red peppers • 2 big red peppers, 3 cups of walnuts, 4 dried tomatoes (soaked for 2-6 hours), red onion, parsley & gomasio • courgette, 2 dried tomatoes, few walnuts, coriander leaves & olive oil

De-seed, stalk and chop 2 big peppers, put in a food processor, add walnuts & dried tomatoes, and process until it gets a pâté-like texture. Finely chop onion & parsley, and mix (don't blend) both into pâté, together with gomasio. Fill small peppers with pâté, replace the lids, and place one or two on each plate.

Make courgette spaghetti (or spiral slice it) in a bowl, season & mix it with olive oil, and put equal amounts around the peppers. Finish off by adding some finely sliced dried tomatoes, and finely chopped fresh coriander leaves & some walnuts. Serve with love & smile... ;-)
